Ok,...it is almost time for the 26th annual (I have only been involved for 23 yrs) "Freeze-in" party. It starts on the Thursday of the 2nd weekend in November and lasts through the weekend. It is a guys only thing that will take place at a local private lake. The bro-in-law and I both have lake front, side by side, campers with additions. Friends come from around the state and it is pretty much a drink/eat fest.

The food throughout the weekend is somewhat themed, which brings me to my question. This year, through rotation, is my Saturday. Thursday is Kabob night, Friday is Asian, and Sunday is German. I am not sure what to do for Saturday. I was sort of thinking about "exotics", smallish (4oz) cuts of stuff like Ostrich, kangaroo, snake, alligator, bear, etc... This way, everyone could do samples of everything. What would be a good combination of exotics?

What do you think? Any ideas? Better ideas?

Hell yeah, how about BBQ? Lions and tigers and bears are ok, and you get to say you ate them, but they aren't that great. Well, ok alligator can be pretty damn tasty, but it's fussy, you really have to know how to cook it. Carolina lowland style pulled pork, chipotle and honey glazed ribs, some cole slaw, baked beans and potato salad, and you're done. The best part is you can make it all ahead of time!! I have a competition bbq team, if you need help with anything, just let me know.
