Is it safe to disconnect speakers with the amp on? I remember someone telling me sometime ago that you have to turn the amp off in order to disconnect or swap speakers.

They gave you good advice. Notwithstanding the very real possibility of accidently shorting the output of the amp, some amps like to see a resistive load - even with no input.
