I've always read unless it's a really long run or you're getting interference there's not much advantage besides a tighter secure fit. I've never personally ran balanced though so I can't say for sure.

I thought I read somewhere that XLR have better rejection of any external "interference", basically better shielding?

True. Do you have your system in the kitchen, near your microwave? or perhaps inside a television studio?

A system in the kitchen probably has very low WAF!
But, what about cables near power cords and a TV?

As long as the cable has basic shielding you will be fine. I was being silly but balanced cables are mainly used in pro scenarios since they have far more sources of interference than the common man, and regular home.

There are some that swear by them for home as well, like Reeltrouble1, and I respect his opinion on that 100%. I'm just not in that camp for typical installations.

the XLR carries both "positive" and "inverted" phases of the "signal"
and thus "common mode" noise or interference should theoretically
    "cancel out."

    Default 2 cents worth...

not only can interference be crazy in pro-audio applications, but cord runs can easily be 50-200 ft. add in unshielded lighting, smoke and mist machines and hi-impedance unbalanced cables are a nigthmare.
