14 lbs, goes in the brine bath in a few hours. I tried the brine bird from 'Good Eats' tv show a couple of years ago and haven't looked for another method since.

Pernil as I know it is the back leg, which is bigger than the shoulder (front). Maybe in PR they call the shoulder pernil...

In Italy we make Capicolla out of the shoulder and from the rear legs.

    My uncle in Campobasso, Italy

raises two pigs every year and slaughters them for all their meat.

Capocolla is made from the top of the pigs neck. Check the meaning in Italian.

Capo is top or head; colla in this case taken from callare means collar hence capocolla. It may be a regional thing and was bastardized over years here in America.

Bless your heart Troy. Here's to hoping that you don't have T-day via a can. From what my sis told me, it's not all that bad, considering. Then again, that was last year in the green zone and I have no idea where you will be.

Happy Gobble day Troy! [from half way around the world.]

Troy, if you DO get a canned Turkey, bring one home for me. I'll serve it up for Christmas and Logan (my 8 year old) can learn a little about the 'real' world.

Matter of fact, bring me a couple MRE's, they boy is a twig, need to put some meat on his bones.

I miss you brotha, more than you know, and I'm thankful the friendship.

    Cheers,

    ****, I'll send you some......

MRE's have come a LOOOONG way. Some of them are edible if not actually pretty good. The heaters they have now (put the meal in a package...add water...instant heat) are a big help. When in doubt...always go with the vegetarian ones. They are usually 'newer' and the pasta ain't bad. About the same as, say, chef boyardee.

We were still consuming C-Rations when I was in the Army Troy. 78-84. MRE's were being introduced just before my discharge. I ate some spaghetti (dry) then drank half a cantene of water. That stuff expanded in my stomach and made me severly ill. My bad. It didn't taste half bad dehydrated tho. GI Crunch n Munch:p

Anyway, catering a 10lb. bird tomorrow for 4 of us with all the fixins. Less the mess that way. Happy Thanksgiving all. Support the Troops. :)

My grandfather used to by suplus C-rations and take them for his lunch at work. I actually thought they weren't bad at all. Better than MRE's for sure.
