So I have a shiny new Ipod, a dock with left/right and digital out, and an old CS400, how can I combine these into a decent garage stereo? Only condition is that it must be cheap, so no fancy tube amplifiers.

You won't be doing 'stereo' with one speaker.
Y-splitter to combine L&R RCA out, feed it to a 'fancy' old mono tube integrated. Bogen, Scott, Heathkit.....
That's the cheapest, simplest way to go.
