Transformers, Master and Commander, Matrix, U-571, are some of the ones I know right off top. There are tons more, just too early for me to think.

Just look for HT Demo scenes.
My favorites right now are the tunnel scene in Cloverfield, the car chase in Children of Men, the 1st Kraken attack in PotC 2, and the pod emergence scene from War of the Worlds.

If you want to show off the surround aspect of your system, pick up The Flaming Lips: At War With The Mystics on DVD-A. I'm not crazy about the music, but the surround mix is insane.
Some good movies have already been mentioned, but some of the animated movies have great sound too. Cars, Toy Story 2 (opening scene), Finding Nemo (Darla scene: crazy bass with a good sub), The Incredibles. Of course, if you don't have kids you probably don't want to drop money on any of these;)

My favorite scene to show, to show off my surround speakers is 'Kill Bill Volume 1' at around 1 hour and 4 minutes (Going off the top of my head). The scene with the crazy 88's. It starts with them making fun of Charlie Brown, then the music building, then the battle...just awesome stuff, and GREAT movie!
Cloverfield.
The THX thing at the beginning of the newest Indiana Jones movie. It made my wife jump.
My equipment sig felt inadequate and deleted itself.
Saving Private Ryan, Jurassic Park, Wyatt Earp and the Patriot are what I use to show off my rig.
In search of accurate reproduction of music. Real sound is my reference and while perfection may not be attainable? If I chase it, I might just catch excellence.

The first battle scene in Gladiator ("On my signal, unleash hell") is a good one as well.
