Default The Grilled Cheese Sandwich

One of my very favorite sandwiches.

The standard is sharp cheddar cheese on sourdough bread grilled with real butter. This one I do quite often.

To dress it up a bit sometimes I'll add a couple of fried eggs. But, my ultimate grilled cheese is; sharp cheddar, mild cheddar, and Gouda cheeses, crispy Apple wood Smoked Bacon and Avocado slices. It's a heart stopper but damn is it good.

Anyone else here grill their cheese? What do you put in it?

I'm known for my three-cheese grilled cheese. Big slice of american, shredded sharp cheddar, and a splash of fontina. Land O Lakes sweet cream, unsalted butter and Mrs. Bairds bread.

Served with a kosher dill slice, and a cup of Tomato soup with a fresh sprig of basil floating on top.

I'll have to try Gouda, I assume it melts well, not stringy? The Avocado sounds fun too.

I think I've found a few new recipies . When I'm lazy and don't want to cook and clean up; grilled cheese is always the default meal, which is quite often! It's getting close to that time of year again (in Illinois) and it's a perfect compliment to a bowl of soup or chili. Still to hot here to be having grilled cheese and soup...but I'm making just the sandwich today for lunch.

Grilled cheese is a great sandwich with soups.
Small pickled sliced jalepeno peppers in a glass jar from the grocery are good, just add 3-4 slices to the sandwich while cooking and get a burst of zing.

Russ the Gouda melts slower, so you end up having to cook it on a lower heat so your bread isn't done before your cheese melted. If you take a pot lit and stick it ontop of the sandwich the cheese will melt faster. Theres nothing I hate more then a grilled cheese with cheese that isn't melted.

I'm also a fan of the grilled cheese's mutant cousin, the quesadilla

In State college in the 60's NO food was allowed in the dorm not even a candy bar. I think the Republicans ran the college, Lowell Technological Institute in MA. We would get some Al foil, any bread and any cheese and use an iron to make cheese dreams. They tasted very good at 2:00 in the morning.

How times have changed.

During the season, I like to do one up with cheddar, freshly sliced tomato with a little bit of salt & pepper and fresh basil on marbled rye.

It's the Jersey tomato....

Same here, but no meat, just the cheese please. I cannot stand beef or chicken quesadillas. Pack it with cheese and give me some sourcream and guacamole.

Steak Quesadillas here....Montery Jack, white cheddar, grilled steak, onions and jalapeņo with no sourcream or guacamole but just a little salsa... now that is GOOD!

For a cold rainy day a grilled cheese is a must but with that, a good dark stout served at room temp. Along with that a plate of steak fries with a side of ranch dressing.

It's cold, rainy, dreary, sleeting, freezing rain, crap day here in the midwest just NW of Chi-town and just S. of Wisconsin.

Thinking about some Tomato soup with a grilled cheese sammich for lunch. So this thread came to mind.

Lately I have been making grilled cheese sandwiches with 10 yr old cheddar! YUMMMMM

And 5 yr old cheddar makes the most perfect macaroni & cheese!
